Sometimes the simplest ingredients make the most interesting snacks!
I’ve been experimenting with different ways to enjoy gelatin, fresh fruit, and chia seeds without adding sugar or spending a lot of money.
This time, I wanted something a little different from my previous gelatin molds. I wanted a firmer texture that I could slice into bars instead of eating with a spoon.
So I doubled the beef gelatin, arranged fresh strawberries, blueberries, and green grapes in a dish, and poured my clove tea gelatin mixture over the fruit.
After about six hours in the refrigerator, I had a colorful, refreshing snack that was easy to slice and enjoy.
For me, healthy living is about finding affordable ways to enjoy food without feeling like I’m cheating myself or my pocketbook.
Ingredients
- 4 tablespoons unflavored beef gelatin
- 1½ tablespoons chia seeds
- Approximately 1¾ cups prepared clove tea
- Fresh strawberries, sliced
- Fresh blueberries
- Fresh green grapes
- A little cool water to bloom the gelatin
No added sugar or artificial sweeteners! The fresh fruit provides natural sweetness.
Instructions
- Prepare the fruit. Wash the strawberries, blueberries, and green grapes. Slice the strawberries and cut the grapes if desired.
- Arrange the fruit in the dish. Spread the strawberries, blueberries, and grapes evenly in a shallow, refrigerator-safe dish before adding any gelatin mixture.
- Bloom the gelatin. Sprinkle 4 tablespoons of unflavored beef gelatin over a little cool water. Allow it to bloom according to the package directions.
- Prepare the chia seeds. Soak 1½ tablespoons of chia seeds in a little water until hydrated.
- Prepare the gelatin mixture. Warm approximately 1¾ cups of prepared clove tea. Stir in the bloomed gelatin until completely dissolved. Add the hydrated chia seeds and mix well. Do not boil the mixture.
- Pour over the fruit. Slowly pour the gelatin and chia mixture over the arranged fruit, making sure the liquid reaches between the pieces.
- Refrigerate. Cover the dish and refrigerate for approximately 6 hours, or until completely firm.
- Slice and enjoy! Once the gelatin has set, cut it into bars or squares. Serve chilled.
